Cape Cuisine: Sauces & Derivatives

White, Brown, Hollandaise, Red, and Veloute. These are the 5 Mother Sauces of classical cuisine, and Chef Mark Kalla is here to help you sample them. Chef Kalla will demonstrate how to make these sauces as well as speak about their origins and components. Finally, he will describe what sort of foods are best paired with each sauce.
 
 

Chef Mark Kalla is the head chef at Green Cuisine Restaurant in Stone Harbor, and had his own restaurant: The Barrier Island Inn. He has been the executive chef at the Backyard Restaurant and later for Fish Tales. He currently runs the Avalon Elementary School cafeteria and teaches culinary instruction to children during the summer.
