Tomato Sauce

  • 5 large ripe tomatoes
  • 2 tablespoons Olive oil
  • 4 cloves garlic
  • 1 medium onion
  • 2 tablespoon pesto
  • 1 teaspoon oregano
  • Salt and pepper to taste


  1. Skin and seed the tomatoes then dice flesh.

  2. Mince onions and garlic and sauté in olive oil.

  3. Add tomatoes and cook for about 45 minutes to reduce the sauce to a thick consistency.

  4. Process in canning bath 10 minutes or freeze.
