Ingredients

  • 1 cup Bulgur
  • 1 cup very hot water
  • 1 can small white beans
  • 2 tomatoes, 1/2 inch dice
  • 1 bunch finely chopped scallions
  • 1 cucumber, seeded and diced 1/4 inch
  • 1 tsp Allspice
  • 1 tsp Sea Salt
  • 1/2 cup chopped parsley
  • 1/2 cup minced mint
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon
  • 1/2 cup extra virgin olive oil

Directions

  1. Combine bulgur and water. Let sit 15 minutes for water to absorb.

  2. Add remaining ingredients and stir.

  3. Let sit for 2 hours in the fridge to let flavors combine.

  4. Serve with pita or crackers.
