Ingredients

  • 1 cup Bulgur wheat
  • 2 cups boiling water
  • 1 cup minced Italian parsley
  • 1/2 cup minced mint
  • 1 can small white beans
  • 2 cups diced tomatoes
  • Juice and zest of 1 lemon
  • 1/3 cup of olive oil
  • 1 bunch green onions cut fine
  • 1 cucumber seeded and diced small
  • Salt and pepper to taste

Directions

  1. Bloom the wheat in the boiling water for about an hour.

  2. Add rest of ingredients and stir gently to combine.

  3. Refrigerate. This recipe will hold for up to four days. Serve with pita chips or on a side of plain Greek Yoghurt.
