Sweet Potato Soup

  • 3 cups left over mashed sweet potatoes
  • 4-5 cups turkey or chicken stock
  • 1/2 cup of honey
  • 1 tsp. nutmeg
  • Salt and pepper to taste


  1. Take all the leftover potatoes and place in a medium sized pot. Add stock about 1 cup at a time until the potatoes have a creamy texture then bring them to a boil (add more stock if needed).

  2. Add honey and nutmeg continue cooking for about 5-10 minutes then using a hand blender purees the soup until smooth.
