Spring Salad with Pancetta Crumble

  • 4 cups fresh spring mix or baby greens
  • ¼ cup toasted almonds
  • ¼ cup sliced baby carrots
  • ¼ cup green onions
  • 1 hard-boiled egg diced
  • 2 radishes, sliced thin
  • 4 slices of pancetta cooked crisp and crumbed
  • ¼ cup orange sections
  • Pita chips
  • Green cheese dressing
  • Orange basil vinaigrette


  1. Put greens into a large bowl and top with the remaining vegetables. Sprinkle the egg, pancetta and orange sections over the top. Line the edge of the bowl with the pita chips.

    Serve with the dressing on the side.
