Soy and Rice Biscuits

  • 2 cups rice flour
  • 2 tablespoon soy flour
  • 4 teaspoon baking powder
  • 2 tablespoon water
  • 1 ½ teaspoon salt
  • 1 stick unsalted butter
  • ½ cup milk or buttermilk


  1. Combine all dry ingredients in a mixing bowl and cut in the butter until crumbly meal is formed.

  2. Add the liquid and gently mix until just combined.

  3. Knead gently until a ball is formed.

  4. Cover and let rest for 15 minutes.

  5. Roll out in rice flour to about ¾ of an inch thick and cut out biscuits. Place side by side on a heavy baking sheet and bake at 400 degrees for about 18 minutes or until risen and golden brown.
