Potato Latkes

  • 1 onion grated
  • 5 large potatoes, peeled and grated
  • 3 tablespoon chopped parsley
  • 4 large eggs, well beaten
  • 5 tablespoon flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon pepper


  1. Mix all the ingredients. Do not let the potato mixture sit out too long or the potatoes will turn grey.

  2. Heat the skillet on medium heat; add about ¼ cup vegetable oil. When the oil begins to smoke you are ready to start cooking. Drop a spoonful of the potato mixture into the skillet and cook until brown, flip and cook the reverse side. Remove from the pan and place on a paper towel to absorb excess oil.

  3. Serve with applesauce and sour cream.
