Ingredients

  • 4 pounds lean top round beef roast
  • 4-5 cloves garlic, chopped
  • 3-4 carrots, peeled, large dice
  • ½ cup burgundy wine or beef stock
  • 3-4 onions, large dice
  • 6-8 potatoes, peeled, large dice
  • 1 envelope onion soup mix

Directions

  1. Trim fat off of roast. Place vegetables in bottom of crock pot.

  2. Brown beef roast in skillet on all sides and place on vegetables. Sprinkle soup mix over all.

  3. Pour wine or stock over everything. Cover crock pot and cook on low for 8-9 hours. Skim fat from juices and serve with beef and vegetables.
