Wash and cut melon in quarters.
Remove fruit for immediate use leaving a little pink on the rind.
Peel outer green rind and discard
Boil rind in salt and water for 5 minutes. Drain, rinse pot and put pot back on stove.
Add rest of ingredients to pot and bring to boil. Simmer until sugar is melted and all ingredients combine.
Pour hot syrup over rind and refrigerate overnight. Drain, reserving and bring back to boil.
Repeat 2 more times.
Seal in jars with wax or process for 10 minutes in canning bath.
