  • 1 shallot minced
  • 1 egg yolk
  • 1 cup extra virgin olive oil


  1. Combine the first five ingredients and whisk well.

  2. While whisking gradually stream the oil in.

  3. Season with salt and pepper.

  4. Keep at room temperature until served.
