Lemon Poppy Seed Bread

  • 1 package Pillsbury Plus Lemon Cake (or any brand that is extra moist)
  • 1 cup orange juice
  • 1 teaspoon lemon juice
  • 2 tablespoon poppy seeds
  • ½ cup neutral flavor oil
  • 4 whole eggs


  1. Pre heat oven to 350 degrees. Prepare either a 9 x 5 inch loaf pan or 4 mini loaf pans by spraying with oil.

  2. In large bowl mix all ingredients until combined completely. Do not over mix. Pour into prepared pans and cook large pan 50-60 minutes or 28-31 minutes for mini pans.

  3. Remove from oven and cool for about 15 minutes in pan. Remove and finish cooling completely on wire rack.

  4. Wrap tightly in plastic wrap and store in refrigerator. For a variation poppy seeds can be eliminated or replaced with dried cranberries or blueberries.
