Lemon Cakes

  • 2 ½ cups flour, plus more as needed
  • 2 cups granulated sugar
  • 6 tbsps. Unsalted butter
  • Grated zest from 2 lemons
  • 1 egg
  • 2 egg yolks
  • Icing: 1/3 cup confectioners’ sugar
  • 1 1/2 tsps. Milk


  1. Procedure: Preheat oven to 350*F and grease a large baking sheet.

  2. In a large bowl mix flour and granulated sugar. Cut in butter. Then add zest and the whole egg and yolks. Mix thoroughly, adding more flour as needed until the dough can be easily shaped by hand and no longer sticky.

  3. Roll the dough into balls about an inch across and place them on the baking sheet about 2 inches apart.

  4. Bake for 15 minutes until the tops are just slightly golden. Cool cookies on tray for 1 minute before moving to cooling rack.

  5. Mix confectioners' sugar and milk to a smooth consistency. Once the cakes have cooled you may drizzle the icing over them.
