Greek Pita Pockets

Ingredients

  • 1/2 pound feta cheese diced 1/3 inch
  • 2 large tomatoes, 1/2 inch dice
  • 1 Red Bermuda onion diced 1/2 inch
  • 1 tbsp minced garlic
  • 1 tbsp oregano, preferably dried
  • Juice of 1 lemon
  • 2 tbsp balsamic vinegar
  • 1/4 extra virgin olive oil
  • Sea Salt and Pepper to taste
  • 1 pack of pita pockets

Directions

  1. Combine all ingredients and let sit for 15 minutes.

  2. Stuff a pita pocket and add some lettuce to the top.
