Mix the first three ingredients to form pasta dough.
Roll out with a pin or pasta machine and cut into fettuccini.
Boil for about 3-4 minutes until dough is just set but not mushy
You can blanch the beans at the same time in the pot with the pasta.
In a sauce pan melt the butter and add the veggies except for the shallot rings and sauté to caramelize a bit.
Add the rice flour to make a roux paste and then whisk in the cream.
Return to a boil and reduce to a simmer until thickened.
Combine sauce with beans and put in casserole dish.
Dredge the rings in rice flour then cream and back in rice flour and fry until crisp.
Top the casserole after baking for 30 minutes at 375 degrees and continue to bake for another 15 minutes.
Serve as a side dish with your other favorite like candied yams, a green vegetable, crudités and dip, stuffing made from gluten free muffins or mashed potatoes.
Cooking gluten free is a bit of a challenge but with the availability of alternate flours and grains and some ingenuity a multitude of great foods you love are still able to be made.
Soy flour can replace eggs using 1 tablespoon soy flour and 2 teaspoon water.
Rice oat and corn flours blended together can produce fine gluten free breads and pastry.
