Ginger Cakes

  • 2 cups all-purpose flour
  • 1 cup firmly packed light brown sugar
  • 1 tablespoon ground ginger or crystallized ginger chopped fine
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup butter


  1. Mix the dry ingredients well; then, with hands, combine them with the butter until well blended and crumbly.

  2. In a 9 inch layer cake pan, put ½ inch thickness of the mixture and bake in preheated moderate oven for 325 degrees, for 45 to 60 minutes.

  3. Cut the ginger cakes into finger shape pieces while still warm.

  4. Remove the pieces carefully with a spatula and store in covered tins.
