Ingredients

  • 2 large tomatoes, cut into wedges
  • 1 large pealed cucmber, cut into 3/4" chunks
  • 1 large green peppers, cut into chunks
  • 1 large onion, cut into chunks
  • 2 scallions, cut into chunks
  • 12 leave basil, to taste
  • Handful parsley
  • 3 cloves garlic
  • 1 tablespoon lemon juice
  • 1/4 cup white sugar
  • 2 tablespoon wine vinegar
  • 4 cups tomato juice

Directions

  1. Combine into 9 cup food processor and blend in food processor until still chunky.

  2. Blend in 1 tablespoon lemon juice, white sugar, wine vinegar, and tomato juice.

  3. Garnish with shopped cucumber- serve cold.
