  • 2 large tomatoes diced ½ inch
  • 1 Vidalia onion diced ½ inch
  • 3 clove garlic minced
  • 1 tablespoon minced wand washed cilantro
  • ½ teaspoon salt
  • Fresh black pepper to taste
  • 1 jalapeno pepper, seeded and minced
  • Juice and zest of two limes or lemons


  1. Mix all ingredients in a bowl and chill for 2 hours to let the flavors to mix.

  2. You can also add a ½ cup of diced fresh mango for a nice twist to this recipe.
