  • 3 cups self-rising flour, divided
  • 3 tablespoons sugar
  • 3/4 cup lard or shortening
  • 1 cup milk


  1. Preheat oven to 400 degree. Lightly grease 1 or 2 baking sheets.

  2. In a large bowl, combine 2 1/2 cups of the flour and the sugar. Using a pastry cutter or 2 knives, cut the lard into the flour and the sugar. Stir in the milk, a little at a time, until all the flour is moistened but not too wet.  Using your hands, work the dough into a ball, but don't overdo it. Using the remaining flour, place the ball onto a floured work surface and pat it into a circle 3/4 inch thick. Cut into 2 inch circles. Transfar the circles to the prepared baking sheets.

  3. Bake for 14 to 17 minutes. Remove from the pan and let cool on a rack.
