Early Spring Green Salad


  • 4 cups Spring Mix
  • 1/2 cup fresh baby peas, Blanched and Shocked in cold water
  • 4 Radishes, Sliced
  • 6 Blanched baby carrots. (The ones with the tops still on them not the ones in the bag)
  • 1/4 cup Chopped Chives
  • 1/2 cups Croutons
  • Crumbled goat or blue cheese if desired


  1. Blanch and shock the peas and carrots.

  2. Prepare the salad in the usual way with greens under the toppings distributed evenly. Fnish with croutons.

  3. Serve with cracked black pepper and dressing of your choice.
