Creamy Ham and Corn Chowder

Ingredients

  • 2lbs starchy potatoes like red skin (skin on or off) cut into bite size pieces
  • 1 med onion diced small
  • 3 cups reduced sodium chicken stock
  • 1/4 cup cornstarch
  • 1 cup corn (fresh, frozen, or canned)
  • 3 carrots peeled & diced small
  • several pinches of fresh thyme (or dried)
  • 1 cup diced cooked ham
  • 1/2 cup half/half or light cream
  • 1 cup frozen peas
  • Salt and pepper to taste

Directions

  1. Cook potatoes in lightly salted water until firm, not mushy, drain and set aside about 1/2 the potatoes. Mash the remaining potatoes adding stock, sauteed onion, ham, peas, and corn. Return potato pieces seasoning with thyme and salt and pepper. Heat gently. Blend cornstarch with half and half adding to stockpot, continue heating until hot. Serve immediately.
