Chocolate Pecan Pie Bars (Kentucky Derby Bars)

  • Pie crust (from the recipe used at this event)
  • 1/2 stick unsalted butter, melted
  • 3/4 packed; cup light brown sugar
  • 3/4 cup light corn syrup
  • pinch fine salt
  • 3 large eggs
  • 1 1/2 tsp vanilla extract
  • 2 tbsp bourbon, of drinkable quality
  • 1 cup of semisweet chocolate chips
  • 1 1/4 cups pecan pieces


  1. Combine the melted butter, sugar, corn syrup, salt, eggs, vanilla and bourbon in the bowl of a stand mixer fitted with the whisk attachment. Mix on medium high speed until frothy.

  2. Remove for mixer and stir in the chocolate chips and pecans. Then pour mixer over the crust.

  3. Bake at 350 until the top is deep brown and the filling is set, about 45-50 minutes. Place the pan on the cooling rack for 15 minutes, Grasp the foil hanging over the sides and lift the bars from the pan. Place the bars (on the foil) back on the cooling rack and leave to cool to room temperature. Peel the foil from the cooled bars, cut, and serve.
