Whip egg whites to a soft peak and set aside in a large bowl.
Whip egg yolks and sugar until pale and thick for about 5 minutes.
While yolks whip, melt the chocolate in a double boiler over low heat.
Beat the chocolate into the egg yolk mixture and fold that mixture into the white's mixture.
Spray Pam and paper a sheet pan and spray with Pam again.
Pour batter in a pan and bake at 300 degrees for about 22 minutes.
Turn out on paper, dust with cocoa and roll into jelly roll.
Decorate for holiday with Grenache icing, dusted with 10x sugar and then cut off a slice from one end and put it in the middle for a tree knot affect.
