Chocolate Biscotti

  • 2 1/4 cups of flour
  • 1/2 cup cocoa powder
  • 1 2/3 sugar
  • 1 teaspoon baking powder
  • 3 large eggs
  • 3 large egg yolks
  • 1 tablespoons almond extract
  • 3/4 cup hazelnuts, skin on (can substitute almonds)
  • 1/2 cup mini chocolate chips


  1. Preheat oven to 350.

  2. In a mixing bowl stir together flour, cocoa, sugar, and bakin powder.

  3. In a separate bowl, whisk together the eggs, yolks, and almond extract.

  4. Add wet mix to dry and stir until dough forms (about 2 m ins).

  5. Add hazelnuts and chocolate chips and mix until just incorporated.

  6. Roll the dough into 3 logs each about 10"x2" and place on parchment lined baking sheet.

  7. Place in oven and bake 20 minutes until light golden brown. Remove.

  8. Allow to cool 5 minutes and cut logs on a slight diagonal in 1/2 inch thick pieces.

  9. Lower heat to 300.

  10. Return cut biscotti to baking sheet, just a little apart from each other and place in the oven.

  11. Bake 20 minutes until crisp and dry.

  12. Cool and Serve.
