Cheese Allumettes

  • 2 sheets of puff pastry
  • 1 cup good quality Parmesan cheese


  1. Preheat oven to 375

  2. Using the cheese as flour, roll the dough out about 2 inches in each direction pressing the cheese into the dough liberally.

  3. Cut into 1/2 wide strips 5 inches long. Then twist each one as syou set it on a parchment lined pan. Leave some space between each one as they will expand during the baking process.

  4. Bake for 10-15 minutes until rich golden brown and mostly crisp. They will set up as they cool.

  5. Let stand for 5 minutes. Serve.
