Black Bean Soup

Ingredients

  • 3 can black beans
  • 1 onion minced
  • 1 carrot fine dice
  • 2 stalks celery fine dice
  • 1 small bell pepper small dice
  • 8 cups water or vegetable stock
  • 2 tablespoon chili powder (mild dark)
  • 1 teaspoon ground cumin
  • 1 small jalapeno seeded and minced
  • Salt and pepper to taste
  • Greek yogurt and grated Cheddar and diced raw onion for garnish

Directions

  1. Rinse beans and all ingredients except for the garnishes to a large pot.

  2. Adjust seasoning and serve with garnishes over white rice if desired for a heartier entrée version.
