Bean Pie

  • 1 pie crust for a deep dish 9 1/2 inch pan
  • 2-14 ounce cans small white beans
  • 3/4 cup brown sugar
  • 1 cup evaporated milk
  • 5 eggs
  • Pumpkin pie spice
  • Pinch of salt


  1. Drain and rinse the beans and puree until very smooth.

  2. Mix the rest of the ingredients in a large bowl and add the pureed beans.

  3. Line the pan with the rolled crust.

  4. Pour in filling and bake at 375 degrees for 20 minutes. This will set the crust.

  5. Reduce heat to 280 degrees and bake about 40 more minutes until the filling is just set in the center.

  6. Cool and serve with whipped topping and candied nuts.
